I am OBSESSED with miso soup. First, it takes only about 10 minutes to make. Second, it’s so tasty! Third, miso soup is very good for your body. What’s not to like? The traditional Japanese recipe calls for a stock called dashi, made with miso, seaweed and smoked dried tuna flakes. I decided to twist that formula and create a super-delicious vegan version. The key is to find top quality miso – believe me, it makes a huge difference. I was in the mood for a filling soup, so I loaded it up with homemade tofu, enoki and shiitake mushrooms, okra and fresh herbs. Of course you can simplify the add-ons, if you choose. But remember to serve the soup while it’s very hot!

INGREDIENTS

FOR THE SOUP
  • 4 cups filtered water, plus some more for rehydrating wakame

  • 2 pieces of dry kombu seaweed (about 10x5cm/4x2in)

  • 1 Tbsp dry wakame seaweed

  • 2-3 Tbsp chickpea miso paste

  • 1 Tbsp tamari (or soy) sauce

  • Salt and fresh grounded black pepper to taste

  • 1/4 block soft tofu, cubed into 1/2 inch cubes

  • 2 shiitake mushrooms, finely sliced

  • Enoki mushrooms, as many as desired

  • 1 okra, finely sliced

  • 1 tsp chives, finely chopped

  • Fresh herbs as nasturtiums, mustard leaves, etc.

PREPARATION

  1. Start rehydrating the dried wakame with water in a bowl. Let stand about 15 minutes, then drain using a strainer. You will notice the volume has increased considerably.

  2. Heat 4 cups of water in a pot over low heat. Add kombu and cook until the water just begins to simmer. Remove from heat, strain the seaweed, and set the broth aside.

  3. Remove one cup of this broth and whisk in the miso paste. Pour this mixture back into the pot, stir well, and add the tamari sauce. 

    * I have used chickpea miso because its made without soy and I prefer its taste, but you can use traditional miso (made from fermented soybeans) instead.

  4. Add the tofu cubes, mushrooms, and wakame, and cook at low heat for another 2 minutes or so.

  5. Serve in a bowl and garnish with the okra “stars”, chives, and herbs.
